I omitted the red pepper and used veggie broth, but followed the recipe otherwise. This meal is filling and light at the same time. You don’t feel guilty eating it and it has a nice flavor.

Servings: 4

Preparation Time: 20 min
Cooking Time: 30 min
Level of Difficulty: Easy
Course: main meals

Ingredients

* 500 g chicken breast, uncooked, skinless, cut into bite sized pieces
* 1 medium onion(s), diced
* 1 clove garlic, crushed
* 100 g mushrooms, chopped
* 1 pub measure vermouth
* 1 level tablespoon cornflour
* 20 portion olives, in brine, drained
* 200 g potato(es), parboiled and sliced
* 2 portion stock cube
* 1 tablespoon fresh or dried herbs

Instructions

Dry fry the onions, garlic and chicken with a spoonful of dried herbs and a little water. Add the mushrooms, vermouth and olives and fry for a little longer. Pour over enough water to cover the ingredients, then crumble in 2 chicken stock cubes. Bring to the boil and simmer for 5 minutes. Mix the cornflour with a little water then add to the still simmering pot, stirring as you add it. Simmer for another few minutes then transfer to a large oven-proof dish. Top with the sliced parboiled potatoes and bake in a medium oven for 20 minutes or until the potatoes have started to turn golden-brown. Serve with green veg.
